In our opinion, spring is the best time of year for fresh produce. After a cold, wet winter, the season
turns and suddenly everything is bursting with flavour. What better accompaniment to a luscious
DOB scotch fillet than this bright spring salad? Sugar snaps, courgettes and asparagus are dressed
with a caper dressing, and served with a sliced scotch fillet. A simple celebration of spring.
